Pair that with volcanic soil and they produce a lemon none like anywhere in the world. They are larger, sweeter and juicier than lemons we are used to here. Just take one of their lemons and put it directly to your nose. There is a feeling of fresh sunshine that pours through it.
Because of their lemon greatness, there is no question as to why this region produces the best limoncello. After dinner limoncello is almost an every night ritual to locals. The secret behind their limoncello is not only the lemons but also how they serve it. It is put in the freezer and taken out only when ready to serve it. So, it’s very cold. Serve this on a warm Summer’s night and the treat will make you believe you are on the Amalfi Coast.
How to make it is easier than you might think.
Here is our recipe:
1 bottle Vodka (750 ml)
10 each Meyer lemons, rinds only
4 cups water
4 cups sugar
1. Put the lemon rinds in a large container. Pour the vodka over it. Cover and put in a dry place for one week.
2. Make the simple syrup. Heat the water. Once it comes to a rolling boil, add the sugar. Mix well for 30 seconds. Turn off. Refrigerate overnight.
3. Drain the infused vodka. Throw out the rinds. Using a whisk, mix the infused vodka with simple syrup.
4. Put this mix in an empty bottle. Cover. Refrigerate.
