Coming to America

In 2010, I was fortunate to study culinary arts in Italy for four months.  It was the best thing I could have done for myself and the restaurant.  I learned more than I ever have imagined, ate great foods, and most importantly, met some amazing people in my industry.  One being, my teacher, Fabio Ugoletti. At only 36 years old, Fabio is one of the youngest Italian chefs to earn a Michelin star, one of the highest recognitions in culinary achievements you can receive.  He’s been cooking in Italian restaurants since he was a boy.  His knowledge of gastronomy and passion for food will be welcomed at our restaurant for one week, where he will be consulting for us. During his week here, we will feature a cooking course taught by Fabio as well as a four course dinner designed specifically for our restaurant’s brand. Mushroom Cappuccino Cannellini beans, sautéed mushrooms, mushroom froth.

Ravioli di Pappa Pomodoro Homemade ravioli stuffed with tomatoes, bread, fresh basil, parmesan cheese.  Tossed in pesto and placed on a bed of parmesan cheese sauce.

Filetto al Pecorino Filet mignon, pecorino crust, local green beans, tomato confiture, vanilla demi – glace.

Mousse di Cioccolato Fabio’s chocolate mousse, extra virgin olive oil, sliced toast.
